It is 8:10 on a Monday night, the rice from last night is staring at you from the fridge, and you have used up all your good ideas. This khao pad recipe turns that rice into a hot, savory plate in about 20 minutes, with chicken, egg, garlic and green onion all fried in one pan. It tastes like you stopped at a favorite place on the way home, and you did not leave the kitchen.

Day-old rice is not leftovers. It is the plan.

Khao pad is Thai fried rice, and it is built for exactly this kind of night: a wok, a few ingredients, and a rhythm of quick stirs. Garlic goes in first for its smell, then chicken, then eggs scrambled right in the pan, then rice and soy sauce tossed until everything is shiny. The method gives you four cups of cooked jasmine rice for four servings, so the box of leftovers is doing real work.

What you need

  • 1½ cups jasmine rice
  • 3 eggs
  • 8 oz chicken breast
  • 4 cloves garlic
  • 3 tbsp soy sauce
  • 3 stalks green onions
  • 2 tbsp vegetable oil
  • ¼ tsp salt
  • ¼ tsp black pepper

How to make it

  1. Mince the 4 cloves garlic and dice the 8 ounces chicken breast. This takes about 5 minutes.
  2. Slice the 3 stalks green onions and set aside.
  3. Heat the 2 tablespoons vegetable oil in a large wok or skillet over medium-high heat for 1 minute.
  4. Add the minced garlic and stir for 30 seconds until fragrant.
  5. Add the diced chicken breast and cook 5 minutes until cooked through.
  6. Push the chicken to the side, crack in the 3 whole eggs, and scramble for 2 minutes.
  7. Add the 4 cups cooked jasmine rice and break up any clumps while stir-frying for 4 minutes.
  8. Drizzle the 3 tablespoons soy sauce around the pan, toss everything together for 3 minutes, then stir in the sliced green onions and cook 1 final minute.
If you only remember one thing Use cooked rice that has had time to cool and dry out, because warm, wet rice steams in the wok and turns clumpy instead of fried.

Notes

Cooked leftovers keep three to four days refrigerated, per USDA FSIS. Cool the rice quickly and get it into the fridge promptly, because cooked rice is a food worth handling with care. Reheat the fried rice until it is steaming hot all the way through, ideally in a hot skillet, which brings back some of the toasty edge.

Fried rice can be frozen in portions, though the texture shifts a little. Reheat it from thawed in a skillet, not a microwave.

The method starts with a 5-minute mincing and dicing job, and that is the part that sets the pace of the whole dish. Cut the chicken into small, even dice so it cooks through in the 5 minutes the method gives it. Chicken is done at 165 F, so cut into the largest piece if you are unsure.

Let the oil heat for the minute the method gives it, because a hot pan fries the rice and a lukewarm one steams it. Then let the garlic stay just 30 seconds. Garlic here is a perfume. Past fragrant it tips into bitter and you cannot take it back.

Push the chicken to the side and scramble the eggs in the pan itself. That little corner of eggs picks up the flavor of the oil and the garlic, and then it breaks up into the rice in soft yellow bits, which is how the dish gets its look. Breaking up clumps of rice with the back of a spoon as you stir keeps every grain separate.

Add the soy sauce around the edge of the pan, not straight onto the rice. It hits the hot metal, caramelizes slightly, and then you toss it in. It is a small move that makes the dish taste like you know what you are doing. We will let you believe it.

Swaps that actually work

The rice is the point. Jasmine, cooked and cooled, has the fragrance and the right bit of stickiness for fried rice. If you only have fresh rice, spread it on a tray and let it dry for a while, or chill it before you start.

Chicken breast can become thigh, which stays juicier and forgives the heat. Shrimp, cooked ham, or sliced sausage all work. Cut them small so they cook at the same pace as the rest. Swipe right on the shrimp and the agent adds it to the cart; swipe left on the ham and it never has to know you considered it.

Green onions can swap for sliced shallots or a handful of chopped cilantro. If you want more vegetables, frozen peas and carrots tossed in with the rice cook in the time you have.

Soy sauce is the seasoning, so use one you like. If you add fish sauce, start with a teaspoon, since it is stronger than it smells. The dish does not need extra salt until you taste it.

A wok is ideal. A large skillet works. The difference is how much rice you can toss without it falling out, so use two batches in a small pan.

If you need to stretch this khao pad recipe, add more eggs or frozen vegetables before you add more chicken. Both go in quickly and keep the pan from getting crowded.

If it goes wrong

The rice is mushy or clumpy. It was too wet or too fresh. Spread it out in the pan, turn the heat up, and give it another minute to dry out. Next time, use chilled rice.

The chicken is dry. The pieces were too big or too long in the pan. Cut them smaller next time and pull the chicken as soon as it is cooked through. In a pinch, a splash of soy sauce at the end adds seasoning, though it will not bring the moisture back.

The garlic tastes bitter. It burned in the oil. Lower the heat, wipe out the pan if you must, and start again with fresh garlic. Time it at 30 seconds, and move straight on to the chicken.

It is flat. Often it is salt, because rice with no seasoning is a lovely person with nothing to say. Add a little more soy sauce and a pinch of black pepper, taste, and repeat. A squeeze of lime at the table lifts it too.

What to serve with it

The default is a plate of fried rice, hot, and eaten with a spoon and fork.

The better version tops it with a fried egg, a few cucumber slices, and a lime wedge. The cool cucumber and the bright citrus balance the savory rice, and the fried egg is a quiet flex.

The thing in the fridge that lifts it is chili sauce, sliced chilies in vinegar, or a spoon of crispy chili oil.

It works as lunch the next day, packed in a container and reheated in a skillet. Fried rice usually reheats without much complaint.

This khao pad recipe is also a quick lunch for one: scale the rice and chicken down and keep the same timing. A smaller pan is easier to toss, and everything finishes quickly.

Why this one earns its place

You do not have to cook something extra to make something good. You just have to use what was already waiting, with a hot pan and a plan. This khao pad recipe is the dish for the night you want dinner to feel like a choice, not a rescue.

Swipe it into your week and the agent can shop the chicken, eggs, green onions and jasmine rice, so tonight's leftover rice is tomorrow's headline.
