Grilled Lamb Kofta Plate With Hummus and Quick Pickles
Jump to recipe ↓
It is 6:20 on a Thursday, there is a pound of ground lamb in the fridge, and you want a plate that looks like someone ordered for you. This grilled lamb kofta plate is about 15 minutes of prep and heat, with spiced skewers, warm pita, hummus and a bright little salad. It is dinner with a reservation, and you are the one who made it. A grilled lamb kofta plate is a lot of plate for 15 minutes.
Spiced lamb with a char, hummus underneath, and pickles that wake it up.
You grate an onion, chop parsley, and mix them into the lamb with cumin, coriander, paprika, salt and pepper. Shape six oval patties on skewers, cook them in a hot oiled skillet or grill pan, and warm the pita. A diced tomato and cucumber salad, hummus and pickled turnips finish the plate, with olive oil and lemon over everything.
What you need
- 1 lb ground lamb
- 3 pita bread
- ½ cup hummus
- ½ cucumber
- 1 tomato
- ¼ cup fresh parsley
- 1 lemon
- 1 yellow onion
- 1 tsp ground cumin
- 0.17 oz ground coriander
- 1 tsp paprika
- 2 tbsp olive oil
- ½ cup pickled turnips
- ¼ tsp salt
- ¼ tsp black pepper
How to make it
- Grate the 1 yellow onion and finely chop the 1/4 cup fresh parsley, about 4 minutes.
- Mix the 1 lb ground lamb with the grated onion, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp paprika, parsley, salt, and black pepper, then form into 6 oval patties on skewers.
- Cook the kofta patties in a hot oiled skillet or grill pan 3 to 4 minutes per side until charred and cooked through.
- Warm the 3 pita breads in a dry skillet until soft.
- Dice the 1 tomato and 1/2 cucumber and toss with the remaining parsley, a squeeze of lemon, and 1 tbsp olive oil.
- Spread the 1/2 cup hummus on each warm pita or plate and top with the kofta, salad, and 1/2 cup pickled turnips.
- Drizzle everything with the remaining 1 tbsp olive oil and extra lemon juice.
Notes
Cooked leftovers keep three to four days refrigerated, per USDA FSIS. Store the kofta apart from the pita and the salad, and reheat them gently in a skillet so they stay juicy. They are good cold, sliced into a pita with hummus the next day.
Ground lamb is cooked when it reaches 160°F inside, per USDA, and the method gives three to four minutes a side until charred and cooked through. Check the thickest part of a kofta, since a very thick one can be browned outside before the center is done.
The kofta mixture freezes well raw, shaped and wrapped, if you want to make a double batch. Thaw it in the fridge before you cook.
The mixture is wet from the grated onion, so it can slump on the skewer. Chill the shaped kofta for ten minutes if it feels loose, and press it firmly around the skewer. If you do not have skewers, shape the patties by hand and cook them the same way.
A kofta plate is a smart choice for date night. It looks generous, you can eat it with your hands, and the table does not have to be perfect. Plates like this are how couples find out whether they argue over the last pickle.
Swaps that actually work
The lamb, the onion and the spices are the point of a grilled lamb kofta plate. The grated onion adds moisture and the cumin, coriander and paprika give the lamb its warm, savory backbone, so do not skip them.
Ground beef or a half and half mix works if lamb is hard to find or costs more than you like. You lose the stronger flavor, but the spices carry it, and the doneness rule is the same 160°F.
If you have no pickled turnips, quick pickled red onion, pickled cucumbers or a spoon of tangy yogurt can fill the sharp corner of the plate. Pickles matter here, because the lamb is rich and the plate needs something sour. Hunting the aisle for them is the kind of quest the agent takes on so you can stay on the couch.
Hummus can be swapped for tzatziki if that is what you have. There is room to play here, but keep something creamy and something sharp.
Fresh parsley is the herb in the kofta and the salad. If you have mint, a little in the salad is a natural fit.
The swap that costs you the dish is lean ground meat with no fat at all. Lamb has fat that keeps the kofta juicy, and a very lean mix will dry out on the grill.
If it goes wrong
The kofta fall apart. The mixture was too wet or the skewers were loose. Chill the shaped kofta for ten minutes before cooking, press them firmly onto the skewers, and turn them gently once, when the first side has formed a crust. If they have already broken up, cook the pieces as patties and serve them the same way.
The outside is burned and the middle is pink. The pan was too hot. Lower the heat to medium and give the kofta a few more minutes, checking for 160°F inside.
They are dry. They cooked too long, or the lamb was very lean. Pull them as soon as they reach temperature, and spoon the hummus or a little olive oil over them. Next time, keep the grated onion in the mix.
It tastes flat. If it tastes flat, it is probably salt. Season the mixture well, since the lamb and the onion take a fair amount, and finish the plate with lemon.
What to serve with it
The default for a grilled lamb kofta plate is exactly what the recipe makes: kofta, pita, hummus, salad and pickles on a plate.
The better version of the default is a pile of rice or a warm grain on the side. It catches the juices and turns the plate into a bigger meal.
The thing in the fridge that lifts it is a spoon of yogurt, a few mint leaves, or a sprinkle of sumac if you have it. Any of them adds a bright corner.
Cold leftover kofta and a little hummus in a pita make a good lunch the next day. Tuck in a few slices of cucumber and a spoon of the pickled turnips, and the sandwich has the same sour corner the plate had, with no extra cooking and nothing to wash beyond a knife.
Why this one earns its place
It is a plate that looks generous and takes a short time. For a dinner that is fifteen minutes on paper, the grilled lamb kofta plate has a lot going on: char, cream, acid and herbs.
When you swipe it into your week, the agent shops the lamb, the pita, the hummus and the pickles, so you do not stand in the aisle hunting for turnips. For ideas on getting more out of one trip, see meal prep for the week. Then try beef kofta for a close cousin, and shawarma plate for the same kind of dinner with a different spice mix.
