It is 12:45 on a Thursday, you are still wearing the lanyard, and the only thing standing between you and lunch is a rotisserie chicken from last night's grocery run. Avocado chicken salad takes about five minutes, no stove, and no mayonnaise. The avocado does the creamy work, the way a good partner covers for you when you have run out of steam.

Shredded chicken, mashed avocado, and a squeeze of lemon, folded together and piled on romaine.

You pull the meat off one rotisserie chicken, dice two stalks of celery and a quarter of a red onion, and mash two avocados in a big bowl, leaving some chunks. Lemon juice and olive oil turn the avocado loose and creamy, and everything folds together. Taste, adjust, and spoon it over the lettuce. There is no cooking, which is the best part of a lunch you make with your coat still on.

What you need

  • 1 rotisserie chicken
  • 2 avocado
  • 2 stalks 2 celery
  • ¼ red onion
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 head 1 romaine lettuce
  • 1 tsp salt
  • ½ tsp black pepper

How to make it

  1. Remove the meat from 1 rotisserie chicken and shred it into bite-size pieces, discarding skin if preferred (about 5 minutes). You should have roughly 4 cups shredded chicken.
  2. Finely dice 2 celery stalks and 0.25 red onion. Chop 1 head of romaine lettuce into serving leaves or bite-size pieces.
  3. Halve and pit 2 avocados. Scoop the flesh into a large bowl and mash roughly with a fork, leaving some chunks.
  4. Stir in 2 tbsp lemon juice, 1 tbsp olive oil, and salt and black pepper to taste until the avocado looks creamy and loose.
  5. Fold in the shredded chicken, diced celery, and diced red onion until everything is coated.
  6. Taste and adjust salt, pepper, or lemon juice. Spoon the chicken salad over the romaine and serve.
If you only remember one thing Stir the lemon juice into the mashed avocado and let it turn creamy before the chicken goes in, because the lemon is what keeps it green.

Notes

Avocado chicken salad is at its best the day you make it. Cooked leftovers keep three to four days refrigerated, per USDA FSIS, but avocado dulls long before that window closes. Press plastic wrap directly onto the surface of the salad so there is no air touching it, and expect the color to fade after a day. Store the romaine separately so it stays crisp.

It does not freeze well, since avocado turns watery and dark. If you want to make ahead, shred the chicken and dice the celery and onion up to a few days early, and mash the avocado on the day you eat it.

If the salad has browned on top, scrape off the dark layer. The green underneath is fine.

If you are choosing between 12 options at lunch and none of them appeal, this is the card for the afternoon you swipe past all of them. The agent shops it in one pass: a chicken, two avocados, a lemon, celery, an onion, and romaine.

Swaps that actually work

The point of avocado chicken salad is the avocado, and the way it gets mashed with lemon juice into a creamy base. Keep it, and use avocados that give slightly when you press them. Hard avocados will not mash, and overripe ones turn the salad brown. If your avocados are not ready, put them in a paper bag for a day or two before you plan to make this. A ripe one yields gently to a thumb at the stem end and does not feel mushy.

Rotisserie chicken can become leftover roast chicken, poached chicken, or canned chicken that you drain well. The method says to expect roughly 4 cups of shredded meat, so use about that much. If you want a bit of tang, add a spoonful of Greek yogurt, though it changes the salad from pure avocado to something closer to a creamy chicken salad. Red onion can become scallions or shallots, and celery can become cucumber for a lighter crunch.

Lemon juice can become lime juice, which gives a different edge that works well here. If you want heat, a pinch of chili flakes or a few slices of jalapeño does the job. If you want a little more bite, add a pinch of garlic powder or a spoonful of chopped fresh cilantro or parsley, both of which fit the avocado well. Romaine can be swapped for butter lettuce cups, a bed of baby spinach, or a bowl of tortilla chips for scooping. Butter lettuce cups make a tidy hand-held lunch. The salad can also sit on toast.

The swap that costs you the dish is using avocados that are not ripe. Hard ones will not mash into a creamy base, and you end up with chicken salad with green gravel in it.

If it goes wrong

The salad turned brown. The avocado was exposed to air for too long, and avocado does not wait around for anyone. Scrape the brown layer from the top and stir in a little more lemon juice. Next time, stir the lemon juice into the mashed avocado before the chicken goes in, and cover the bowl tight.

It is too mushy. The avocados were too ripe or the mash went too far. Fold in more diced celery and a handful of extra shredded chicken for texture, and serve it over the romaine so the crunch carries it.

It is bland. Usually it needs salt. The method calls for salt and black pepper to taste, so taste it after folding in the chicken, since the chicken soaks up seasoning. A little more lemon wakes it up as well.

It is dry. There is too much chicken for the avocado. Stir in another splash of olive oil and a bit more lemon juice until it looks creamy and loose again.

What to serve with it

The default is romaine leaves, either as a bed for the salad or as cups to scoop it into, and the crisp lettuce is a nice contrast to the soft, creamy mix. For a better version, serve it on toasted sourdough as an open-faced sandwich, or stuff it in a warm pita. A handful of tortilla chips or crackers on the side adds crunch, and a few cherry tomatoes make the plate brighter.

It can serve as lunch the next day if you are careful with the avocado. Press the wrap onto the surface, and add a squeeze of lemon before you eat. If it has darkened, scrape the top, and the rest is fine. For a packed lunch, keep the romaine in a separate container and spoon the salad over it at the last minute, so the leaves are crisp when you sit down.

Why this one earns its place

Many lunches are a negotiation between effort and hunger. Avocado chicken salad asks for five minutes and a fork, and it gives you something green, creamy and filling. It is a lunch that does not make you feel like you settled.
